Fire & Water Cleansing in June Festival

Here along the Denia beaches we have a beautiful festival that is held every year on the night of June 23rd.

The beaches are filled with individual gatherings. You can hear people playing guitar and singing. People bring food and wine to celebrate San Juan.

The idea is to purge and forget all your past regrets and move forward with your affirmations or wishes for the year ahead.

Every year we make a fire on the beach, write down our 3 wishes on a piece of paper which we add to the fire at midnight. Then we jump over the fire three times. The whole evening has a magical relaxed atmosphere. People also put flowers in the sea.

If you are here on June 23rd you are welcome to join our Vegan fire, make a toast, create your wishes and enjoy the beautiful energy.

Chestnut & Pecan Nut Roast

This lovely nut roast is a tasty dish to serve with your roast dinner, or sliced in sandwiches. Simply and quick to prepare.

Utensils

  • Frying Pan
  • Oven
  • Loaf Tin
  • Baking Parchment
  • Food processor with s blade

Ingredients:

  • 2 x shallots or small onion diced
  • 2 x garlic cloves chopped
  • salt and pepper
  • Olive Oil
  • 1 Pack of mixed or regular mushrooms
  • 300g of pecans or walnuts
  • 100g of chestnuts
  • 200g of tomato sauce
  • 3 slices of wholegrain bread

Add 1 tbsp of olive oil to your pan and heat on med temp. When oil is hot add shallots, salt and pepper, garlic and mushrooms. Fry until soft and cooked. Add to your processor and add the rest of the ingredients. Pulse until the mixture has been mixed together. Make sure the mixture is quite smooth. Line your loaf tin with the baking parchment and add the nut loaf mixture. Smooth and pat down so it has a nice shape. Put in the oven at 175 C and cook until the top is firm roughly around 40 mins. Take out of the oven and allow to cool for 10 mins before taking out of the tin. Set aside, slice and serve with your meal. This is also lovely cold the next day in sandwiches or with salad. It will keep in the fridge wrapped up for 3 days.

Healthy Vegan Nutrition & Autoimmune Diseases

This article is for any vegans with an Autoimmune disease and for vegans that would like to help prevent the onset of an Autoimmune Disease.

We can all agree that being vegan helps tremendously with alleviating the symptoms of Autoimmune conditions. Here are some interesting facts related to Nutrition and Autoimmune. They all connect and you will discover the connection in the final conclusion at the end of the article.

FATS:

If you are like a lot of vegans you have probably been following a lot of advice that fat is very bad for you. One example of this is Dr. Esselstyn who advocates against all fats. And that fats should be consumed in moderation.

We have been bombarded with information about low fat diets. That low fat is healthy.

Types of Fats:

Not all fats are made equal. Some are essential and beneficial for the body hence Essential Fatty Acids. Are bodies cannot make them so we need to obtain them from food. To be brief have just included the good fats.

Beneficial & Essential Fats:

  • Nuts
  • Seeds
  • Nut Butters
  • Olive and Avocado Oil
  • Avocados

At least 30% of your daily dietary intake should include the above beneficial and healthy fats. You may be asking why? Through out your day you will be exposed to and eating lots of fat soluble vitamins that keep your body super healthy like Vitamin D, E, K and A. These vitamins need the fats to function properly. To take care of your bones, your skin, your intestines, your immune system, muscles and telemores etc. Also you will be benefitting from lots of extra vitamins, minerals and proteins.

A lot of you will believe these fats will cause you to gain weight. Numerous studies have proven that by consuming healthy fats you remain fuller longer, have a reduced waistline and actually loose weight. For more than 40 years experts have been advocating a low fat diet. I think this stemmed from offsetting the health dangers of people consuming animals and the associated risks of obesity on health. So it never really applied to vegans.

Fat Soluble Vitamins:

Vitamin D – Sunshine/Hormone Vitamin

Vitamin D carries out over 2,000 actions on the body we have 2000 receptors for it. Current estimates are that 40% of the population are deficient. Surprisingly even those that spend all day in the sun. Which leads to the question why? Also those that are deficient in Vit D are more likely to develop MS and other Autoimmune Diseases. Also people with low Vit D have shorter telemores which we know causes disease, cancer and ageing in the body.

Vitamin D deficiency (low serum levels of 25(OH)D) is prevalent in multiple autoimmune diseases, e.g. MS, TIDM, and SLE. Because the vitamin D status is highly associated with the risk of autoimmunity, Vitamin D has been implicated in prevention and protection from Autoimmune Diseases.

In many studies people with Hashimotos found that by treating their Vitamin D deficiency reduced significantly the level of TPO Antibodies and reduced the TSH level and reduced the progression of the disease.

Vitamin E

Given the role of vitamin E as a physiologic stabilizer of lysosomal membranes, its deficiency can initiate the process of autoimmune diseases or accelerate its progress. It is supposed that vitamin E could reduce oxidative stress, which is an important factor in the pathogenesis of autoimmune diseases.

Vitamin K2

A lot of people are deficient in this vitamin. It is essential for the body and most prefer to supplement. It has helped with the Inflammatory cellular infiltration and the expression of both MHC class II and inducible nitric oxide synthase (iNOS) in the spinal cords of early onset MS. It works with Vit D to keep the arteries clean and keep dietary calcium in the bones. It can help prevent atherosclerosis.

Vitamin A – Calming Vitamin

Vitamin A is essential for a strong immune system, and vitamin A deficiency has been linked to autoimmune diseases such as rheumatoid arthritis and type 1 diabetes. Researchers suspect the reason has to do with our dendritic cells, which send out a “red alert” at the sign of a supposed invader, to stimulate immunity, or a “calm down” message that tones down excessive and damaging immune reactivity. The “calm down” message makes use of vitamin A.

Conclusion:

Following the advice for the past 40 years that low fat is best, a lot of people are deficient in fat soluble vitamins plus beneficial and Essential Fatty acids. Being vegan provides a wealth of vitamins and minerals to ensure wonderful health. The rates of autoimmune diseases are on the increase. If we embrace the healthy fats in our lives we can absorb all these beneficial fat soluble vitamins so that our bodies can heal and our diseases can stop progressing.

Experts say to do something you love doing. My thing is laughing and seeing other people happy. People tell me they continue laughing the rest of the day after doing this class, for me that is fantastic to hear. There are so many mental and physical benefits that come from happiness. We are blessed with this beautiful garden as our classroom. No yoga mat required. All levels of fitness. Plenty of parking. Come laugh with us!!!

Chocolate Brownies Recipe.

This recipe was created for lovers of deep rich pure chocolate. To satisfy a craving without being heavy, so no oils or refined sugars. This recipe uses healthy ingredients like sweet potato, walnuts, pure cacao and oats.

I like to make use of ingredients that I already have in the kitchen, as we try to be a waste free space. We had sweet potatoes and oats, so I thought I would try these as the main ingredients. So here is the recipe. Enjoy!!!

1st Layer

  • 2 cups of oats ground fine in your mixer with the s blade.
  • 2 peeled and cooked sweet potatoes
  • 1/2 Cup of Orange Juice or Maple Syrup
  • 1/2 Cup of pure cacao powder

Blend the above in your mixer with the s blade until a smooth batter consistency.

Spoon into a large spring form pan lined with baking parchment. I used a large square one. But you could also make this round as a yummy chocolate cake.

2nd Layer

This came out as a slightly runnier consistency which made the end result more moist and gooey. Yummier!!! When I use cups as a measure I use mugs.

  • 2 bananas
  • 1 Cup of walnuts
  • 1/2 Cup of pure cacao powder
  • 1/2 Cup oats ground fine in your mixer with the s blade
  • 1/4 cup of orange juice or Maple syrup.

Spoon over the top of the first layer. Bake in the oven around 20 mins 170 centigrade. Or until top feels firm and springs back. All ovens seem to be different. So check after 15 mins. If not ready bake a bit longer.

When cool turn out onto a big plate.

3rd Layer

  • 200g cashews
  • 1/2 Cup of dark raw cacao chips/nibs or break up a bar of raw cacao chocolate to make to 1/2 Cup
  • 3 Tbsps of pure cacao powder
  • 3/4 cup of any plant based milk

Blend the above until it is a smooth mixture and all ingredients have been blended. Spoon over the two layers and sprinkle raw cacao over the top or break up pieces of raw cacao chocolate.

Leave in the fridge for the top to set. This will stay fresh for 3 days. Also it does not dry out but stays moist and delicious.
