The Calcium Conundrum??

Wanted to share details about a great app called Cronometer. You add what you have eaten or drank during the day and it gives you a very detailed nutritional report. If you are like me you may have decided to take various supplements. I was taking zinc, opti3 Omega 3 and 6, plus the odd multivitamin on top of the B12. After using this app I was very pleased to notice that my diet is full of zinc, Omega 3 and 6. Well everything except calcium and B12. So have stopped taking all the extra vitamins and just top up on the calcium. Am taking a 600mg a day Calcium supplement with the other 600mg by eating more calcium rich foods. Plus am taking Vit K2 MK7 which helps keep the calcium out of your blood and into your bones plus Vit D3 even though I get enough sun apparently your body as it ages does not convert it very well.

Also for anyone that has low thyroid have just discovered it’s all connected with vitamin D and Calcium. So by having low thyroid you are also prone to also having lower calcium and Vit D levels. So worth checking your levels with your GP if you have Hashimotos.

It’s great to find out that a whole foods vegan diet really does provide amazing nutrition and I love seeing all those green bars on the Cronometer app. Very satisfying.

Am sharing this as a long term vegan. Because if we share information it may help others.

Am 100% convinced that being vegan is the best for everyone but perhaps we need to take more care to ensure we are obtaining everything our bodies need to stay well.

Laughter Yoga

Experts say to do something you love doing. My thing is laughing and seeing other people happy. People tell me they continue laughing the rest of the day after doing this class, for me that is fantastic to hear. There are so many mental and physical benefits that come from happiness. We are blessed with this beautiful garden as our classroom. No yoga mat required. All levels of fitness. Plenty of parking. Come laugh with us!!!

Chocolate Brownies Recipe.

This recipe was created for lovers of deep rich pure chocolate. To satisfy a craving without being heavy, so no oils or refined sugars. This recipe uses healthy ingredients like sweet potato, walnuts, pure cacao and oats.

I like to make use of ingredients that I already have in the kitchen, as we try to be a waste free space. We had sweet potatoes and oats, so I thought I would try these as the main ingredients. So here is the recipe. Enjoy!!!

1st Layer

  • 2 cups of oats ground fine in your mixer with the s blade.
  • 2 peeled and cooked sweet potatoes
  • 1/2 Cup of Orange Juice or Maple Syrup
  • 1/2 Cup of pure cacao powder

Blend the above in your mixer with the s blade until a smooth batter consistency.

Spoon into a large spring form pan lined with baking parchment. I used a large square one. But you could also make this round as a yummy chocolate cake.

2nd Layer

This came out as a slightly runnier consistency which made the end result more moist and gooey. Yummier!!! When I use cups as a measure I use mugs.

  • 2 bananas
  • 1 Cup of walnuts
  • 1/2 Cup of pure cacao powder
  • 1/2 Cup oats ground fine in your mixer with the s blade
  • 1/4 cup of orange juice or Maple syrup.

Spoon over the top of the first layer. Bake in the oven around 20 mins 170 centigrade. Or until top feels firm and springs back. All ovens seem to be different. So check after 15 mins. If not ready bake a bit longer.

When cool turn out onto a big plate.

3rd Layer

  • 200g cashews
  • 1/2 Cup of dark raw cacao chips/nibs or break up a bar of raw cacao chocolate to make to 1/2 Cup
  • 3 Tbsps of pure cacao powder
  • 3/4 cup of any plant based milk

Blend the above until it is a smooth mixture and all ingredients have been blended. Spoon over the two layers and sprinkle raw cacao over the top or break up pieces of raw cacao chocolate.

Leave in the fridge for the top to set. This will stay fresh for 3 days. Also it does not dry out but stays moist and delicious.

World Vegan Day Celebration Brunch & Laughter Yoga

A very Merry Loving Vegan Christmas ♥♥♥

We love it here when fellow vegans meet, eat together and become friends. Christmas is a time to be with like minded people. To feel the energy of love and companionship. At Vegan Life Energy we love bringing people together. We love to prepare delicious meals for all to enjoy. For us Christmas is celebrated a little differently we do not have a Christmas tree or the usual commercial trimmings. We prefer to celebrate with good company and great food, to relax, discharge knowing that all food is lovingly prepared without harm to others. To enjoy the peaceful nature that surrounds us and the soft melodic sounds of the waves from the Mediterranean sea.

This year we have reduced our prices for December so that hopefully enjoying a vegan Christmas with us will be affordable for everyone.

After breakfast you can relax in the gardens. There is Yoga here once a week or you can do a meditation class with me.

A Vegan Therapist´s Viewpoint

The world we live in is made up of experiences.

Sometimes these experiences can lift us and some can bring us down.

We were designed as human beings to have a full range of emotions and feelings. We are a beautiful and complex mix of energy signals constantly transmitting outwards and also receiving signals inwardly-

Our light can easily be dimmed and when that happens our energy levels are zapped. If this is left unchecked we start to doubt ourselves, we see our achievements as small. We loose interest in the things that gave us pleasure.

Seeing a therapist is liking turning your light back on.

Light & Fluffy Sponge Cake Recipe Vegan & GF

Super moist, light and fluffy sponge cake recipe from our Vegan Life kitchen. Easy to make, no refined sugars plus GF. Will keep for 3 days in the fridge, its a good idea to wrap the cake with foil if you are not eating the same day as this stops the cake from drying out in the fridge.

Ingredients:

  • 2 and 3/4 cups of buckwheat flour
  • 1 large tbsp of baking powder and 1 large tbsp of bicarb of soda
  • 1/2 Cup of Vegan Milk mixed with 1/2 cup fizzy water to make up to 1 cup (I used Soya Vanilla milk)
  • 1/2 cup of olive oil (I used cold pressed)
  • 1/2 cup of blended date paste or maple syrup
  • 1 Cup of fruit juice (any juice works well, I used orange juice)
  • 1 tsp apple cider vinegar

Add the flour to one large bowl. In a second bowl add the oil, syrup and juice.

Slowly alternate by adding a little of the flour, then a little of the milk to the oil and syrup. Whisk to blend the ingredients together. When all the flour and milk have been added to the oil and blended well together add the tsp of apple cider vinegar and whisk briskly for several minutes.

Add your sponge batter to 2 two greased 9″ sponge spring form round pans and bake in the oven 170 C for 35 mins or until tops are golden and feel springy. Turn out when cool.

Frosting:

In your blender add 200g of nuts, cashews work well as do hazelnuts, add dates to sweeten 3-5 depending on taste, you can also add vanilla or cinnamon for flavour, then add a little water to cover the nuts. Blend until you have a good frosting consistency. Spoon over the top and centre of the two sponges and layer with fruits on the top.
